Make and take: Prepare the day before to allow the flavors to blend. Transfer in a plastic food storage container, and store leftovers in the refrigerator.
Made famous by: Mike Jones of McDonough, who says it's a "great crowd pleaser at potlucks and socials." He says it's best with white tortilla chips -- but thick-cut potato chips would be good, too.
File this recipe under "guilty pleasures": It's salty, sweet, tangy and ridiculously fatty. But that's what happens when you cut Velveeta with mayonnaise.

Ingredients:

1 small onion, cut into eighths
1/2 (12-ounce) jar Santa Fe Grande chile peppers, reserving the juice
1 clove garlic, crushed
1 pound Velveeta cheese, cut into 1-inch pieces
1 (16-ounce) jar mayonnaise or Miracle Whip
Instructions:
Place the onion, peppers and garlic in a food processor or blender. Chop until very fine, almost pureed. Add the cheese, mayonnaise and 1/4 cup reserved juice from the peppers. Process the mixture until smooth, adding more pepper juice as necessary to achieve a good consistency for dipping. Refrigerate overnight to allow the flavors to blend.
Tester's note: To make the cabbage serving bowl, cut a flat disk on the stem side of a head of cabbage to enable it to stand upright on a plate. Carefully pull open, without removing, a few of the outer leaves, and use a small, sharp knife to cut out the inner leaves about 1 to 2 inches from the bottom. Use a few of the cut-away leaves to line the inside of the shell, then fill with the dip.
