This recipe came from Kirby Colson of Las Vegas, who discovered the 5:30 Challenge when visiting her daughter, Heather Ewing, in Atlanta. She loved the idea of preparing a meal with only five ingredients in 30 minutes or less, especially for her daughter, who has two children keeping her busy.
This lighter version of chicken Parmesan fits perfectly into the challenge's quick, easy and healthful goals. Colson writes: "This is great for a last-minute dinner any time of year, especially if you are weight conscious and longing for something Italian." Instead of deep frying breaded chicken, here you lightly saute breasts in heart-healthy olive oil.

Ingredients:

2 tablespoons extra-virgin olive oil
1 pound chicken breasts, pounded to even thinness
3/4 cup marinara sauce
1/2 cup shredded mozzarella
3 tablespoons grated fresh Parmesan cheese
Instructions:
In a large ovenproof skillet over medium-high heat, add olive oil. Add chicken and turn to coat both sides with oil. Brown chicken for 3 to 5 minutes per side. Spoon marinara sauce over chicken pieces and sprinkle evenly with mozzarella then Parmesan.
Place skillet in oven until cheese melts and chicken is thoroughly cooked, about 5 to 10 minutes.

To make the meal: sauteed garlicky broccoli and orzo with parsley
