Matt Doroff of Norcross sent in a great one-pot, family friendly meal with an even better “kid-approved” acronym, SCRAM (Salsa, Cheese, Rice and Meat). This is convenience cooking at its best, a ground meat skillet dinner using salsa and taco seasoning for flavor and cooked rice to add heft. I rolled leftovers up in a tortilla for a burrito filling and that was also a hit with my kids.
I found that 2 cups of rice was the right balance for my taste, but to stretch out the meal, Doroff uses up to 6 cups.

Hands on time:   Total time: 30 minutes  Serves: 4

Ingredients:

    1 pound extra lean ground beef or ground turkey breast
    1/2 (1-ounce) package reduced-sodium packet taco seasoning
    1 (8.8-ounce) package brown or white cooked “Ready Rice” or 2 cups cooked instant rice
    1 1/2 cups shredded sharp cheddar or pepper jack cheese
    1 1/2- 2 cups salsa

Instructions:

In a large skillet, brown meat with taco seasoning, draining excess oil if necessary. Add rice, cheese and salsa to taste. Stir well to combine and stir until heated through.

To make the meal: Corn bread and salad
