Aaron's Apple Crisp

"My son loves food. He creates meals out of leftovers in the fridge (he calls them 'concoctions'). He is very adept at chicken dishes, such as honey mustard chicken, and he makes a terrific "stoup." That's what our family calls a soup that is thick and chunky like stew.

Ingredients:

6 cooking apples, peeled and sliced
1 tablespoon lemon juice
1 1/2 teaspoons cinnamon (divided use)
3/4 cup brown sugar
1/2 cup all-purpose flour
1/2 cup quick-cooking oats
3/4 teaspoon ground nutmeg
6 tablespoons margarine or butter, cut into small pieces
Instructions:
Preheat the oven to 375 degrees. Lightly coat the bottom of an 8-by-8-inch baking pan with cooking spray.
In a bowl, combine apples, lemon juice and 1/2 teaspoon cinnamon. Transfer mixture to pan.
In the same bowl, mix brown sugar, flour, oats, nutmeg and remaining teaspoon cinnamon. Add butter and quickly work in with fingertips, pastry blender or two knives until moistened but still crumbly. Sprinkle on apple mixture. Bake for 30 minutes, or until apples are tender.
