Angel Hair Pasta With Tomato-Clam Sauce

Low fat:
As the pasta boils, simple shelf-staples and fresh tomatoes are reduced to a flavor-packed, low-fat sauce. Stir in canned clams, spoon over hot pasta and dinner's on in less than 20 minutes. Serve with tossed mixed greens with a balsamic vinaigrette and crusty Italian bread brushed with olive oil and grilled or warmed under a broiler, all possible within our 30-minute limit.

Ingredients:

2 garlic cloves, minced
2 ripe plum tomatoes, diced
1 (6 1/2-ounce) can baby clams or chopped clams
1/2 cup white wine
6 ounces angel hair pasta
Instructions:
Put a pot of salted water on to boil for the pasta.
Saute garlic and diced tomatoes in a well-oiled saucepan or skillet.
Add clam juice from canned clams and white wine, and heat to boiling. Reduce sauce about 10 minutes over high heat, stirring occasionally, until it reaches desired thickness. Meanwhile, add pasta to boiling water and cook according to package directions.
When sauce is ready, reduce heat to low, add clams and heat 1 minute more. Season to taste with salt and pepper.
Drain pasta and divide between serving bowls. Top with sauce.
