Apple Walnut Vinaigrette

This tangy-sweet dressing is perfect on mixed greens, arugula or spinach. Add some sliced apples, a sprinkling of walnuts and some goat or blue cheese for a beautiful autumn salad. The dressing keeps well in the refrigerator for several days. -- Deborah Geering

Ingredients:

1 apple, peeled, quartered and cored
2 teaspoons chopped red onion
5 tablespoons granulated sugar
1/2 cup good-quality apple cider vinegar
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/4 cup walnut or hazelnut oil (cold-pressed for flavor)
Instructions:
In a blender or food processor, finely chop the apple and onion. Add the sugar, vinegar, mustard and salt and blend until smooth. With the motor running, drizzle in the oil until well incorporated.
