Q: My wife and I are fans of the mountain trout served at Aspens. It is accompanied with a side of grits that seems to be different from any other we have had. We would be most interested in getting the recipe for the grits.

A: It seems as though Atlantans never tire of cheese grits, and each restaurant offers a slightly different version to keep their regulars coming back for more. Aspens' managing partner, Jimmy Huch, was glad to provide the restaurant's signature recipe, which goes together in a flash for a quick, delicious side dish. As always when making grits, use caution, because they can splatter while cooking.

Hands on time: 15 minutes  Total time: 15 minutes  Serves: 10

Ingredients:

    1/2 cup (1 stick) butter
    5 cups reduced-sodium chicken broth
    2 cups heavy cream
    1/2 teaspoon Tabasco sauce
    2 1/2 cups quick grits
    1 cup shredded cheddar cheese
    Salt and pepper

Instructions:

In a stockpot, bring butter, chicken broth, cream and Tabasco to a boil. Slowly add grits and cook for 3 to 5 minutes, stirring constantly, until thickened. Add cheese and simmer 2 more minutes, stirring constantly. Season with salt and pepper to taste.

Nutrition:

Per serving: 461 calories (percent of calories from fat, 60), 13 grams protein, 33 grams carbohydrates, 1 gram fiber, 31 grams fat (19 grams saturated), 102 milligrams cholesterol, 442 milligrams sodium.
