Carol Sue Ravenel, who submitted this recipe, told us that she found an almost identical one on the Internet, suggesting it probably originated in an old Jell-O cookbook — undoubtedly a popular recipe source for her aunt and other women of her generation. That recipe suggested strawberry- or lemon-flavored gelatin rather than her aunt’s preferred flavor of raspberry. We have to confess we were extremely skeptical how any Jell-O variety would pair with tomatoes, but all of us who tried it found it oddly appealing. The tomatoes give it a fresh taste, and the blue cheese dressing provides a nice, creamy contrast to the sweetness. So go ahead — serve it to guests. Just keep the “surprise” to yourself.

Hands on time: 10 minutes  Total time: 6 hours  Serves: 6

Ingredients:

    1 (0.25-ounce) packet unflavored gelatin
    1 (2.75-ounce to 3-ounce) package raspberry gelatin
    1 cup boiling water
    1 (14-ounce) can stewed tomatoes
    1 tablespoon vinegar
    6 tablespoons blue cheese or feta cheese salad dressing

Instructions:

Sprinkle gelatin over 1/4 cup cold water and set aside.
In a bowl, combine the raspberry gelatin with the boiling water. Stir in the soaked gelatin. Puree the tomatoes and vinegar and add to gelatin mixture. Pour into a 6-cup mold and chill until firm, 4 to 6 hours. To serve, unmold and drizzle each serving with blue cheese dressing.
