Barbecue Chicken Pizza

"After having Barbecue Chicken Pizza in a restaurant, I decided to make my own rendition, " says Chris Eddy of Taylors, S.C. "I would never have tried it myself, but a friend of mine ordered it as an appetizer and I was hooked." This ought to go over with the young ones who may not know that pizza can come in different flavors.

Ingredients:

1 1/2 cups cooked chicken, cubed
3/4 cup diced yellow onion or shredded green onions
1/2- 3/4 cup your favorite barbecue sauce
1 prepared pizza crust
2 cups shredded mozzarella cheese
Instructions:
Preheat oven to 450 degrees. Heat a well-oiled (preferably with olive oil) nonstick skillet over medium-high heat. Brown the chicken in the oil, remove and set aside. Saute the onions in the same skillet until tender. Spread the barbecue sauce over the crust. Add the cubed chicken and onions. Top with shredded mozzarella. Bake in oven for 10 minutes or according to pizza shell packaging.
Notes:
Eddy likes to sprinkle garlic powder on the chicken while browning it. "Use more or less barbecue sauce based on your own preference," she says.
