Barbecued Chicken With Pineapple and Onion

This is similar to Basic Barbecue Rub (see separate recipe listing) but gets a sweet twist from pineapple and brown sugar.

Hands on time: 10 minutes  Total time: 40 minutes  Serves: 4

Ingredients:

    1 cup chopped pineapple with juice, preferably fresh, not canned

    1 red onion, chopped

    2 tablespoons soy sauce

    1/2 cup light brown sugar

    1/4 cup yellow mustard

    1/4 cup ground cumin

    1/4 cup cayenne pepper

    1/4 cup chili powder

    1/4 cup paprika

    2 tablespoons black pepper

    2 large chicken breasts, split, to make four servings

Instructions:

Combine the pineapple, onion, soy sauce, brown sugar, mustard, cumin, cayenne pepper, chili powder, paprika and black pepper in a food processor and process until smooth. Rub into the surface of the chicken breasts and let sit, refrigerated, for 30 minutes before grilling.

Grill in the center of the fire for 10 minutes per side, or until the breasts are opaque all the way through (you can slice one slightly to check, if needed).

Per serving: 353 calories (percent of calories from fat, 16), 32 grams protein, 48 grams carbohydrates, 9 grams fiber, 7 grams fat, 66 milligrams cholesterol, 876 milligrams sodium.
