Low cal:
Beef and broccoli are a winning combo. Most supermarkets sell meat cut for stir-fry and bagged broccoli florets, so it's easier than ever to make. Add a bright red or yellow bell pepper for color, texture and flavor and your favorite stir-fry sauce, and a meal is made.
Hands on time: Total time: 30 minutes Serves: 4
Ingredients:
-
3 cloves garlic, thinly sliced
1 1/4 pounds sirloin steak, cut into thin strips
1 red or yellow bell pepper, seeded and cut into 1-inch pieces
4 cups broccoli florets
1/3 cup stir-fry sauce
Instructions:
In a large, well-oiled wok or skillet over medium-high heat, add the garlic and beef and stir-fry for 1 minute. Remove to a plate. Add the bell pepper and stir-fry for 2 minutes. Add the broccoli and 1/3 cup water. Cover and cook 3 to 5 minutes, or until broccoli is crisp-tender. Uncover and return the steak and its juices and the stir-fry sauce to the pan. Stir-fry until heated through.
Notes:
For even more flavor, use a combination of vegetable oil and Asian sesame oil to grease the pan. If you don't feel like beef tonight, substitute chicken, shrimp or tofu for the steak.
