Beef and Pineapple Skewers

I first got the idea for these skewers after seeing an ad for Asian-flavored marinades made with fruit juices. But when I looked for them at the store, I couldn't find any. I improvised by using teriyaki marinade and adding fresh pineapple and veggies, with winning results.

Ingredients:

3/4 cup teriyaki or other flavored marinade, divided
1 1/2 pounds sirloin steak, cut into 1 1/2-inch cubes
1 cup fresh pineapple, peeled, cored and cut into 1-inch cubes
2 red bell peppers, cut into 1-inch cubes
1 red onion, cut into 1-inch cubes
Instructions:
Preheat the grill. Reserve 1/4 cup marinade. Combine steak and remaining marinade for 20 minutes. Drain steak from marinade (discarding used marinade). Alternate pieces of steak, pineapple, pepper and onion on the skewer. Grill, turning often, brushing with reserved marinade for 5 to 8 minutes, or until done.
Notes:
There are so many marinades on the market that you can mix and match them with assorted vegetables and fruits to customize dinner to your taste. If using wooden skewers, soak them in water while the beef marinates.
