Q: My friends and I recently enjoyed a delightful lunch at Harvest Moon Cafe in Rome. This establishment serves a very tasty black-eyed pea salad that is the perfect accompaniment to sandwiches or lighter fare. Could your staff please put in a request for this recipe?

A: "It's a real simple salad, " confessed general manager Ed Baker. A good seller, though - it's often one of diners' choices for the meat and three, he said. "The most prevalent taste in it is the balsamic vinegar," Baker said.

Ingredients:

1/4 cup granulated sugar
1/4 cup olive oil
1/4 cup balsamic vinegar
6 cups black-eyed peas, cooked and drained
1 medium red bell pepper, chopped in 1/4 inch dice
1 medium yellow bell pepper, chopped 1/4 inch dice
4 green onions, sliced in 1/4 inch pieces
Salt and pepper to taste
Instructions:
In a small saucepan over medium heat, stir together the sugar, oil and balsamic vinegar until sugar dissolves. Remove from heat and cool to room temperature.
Combine the peas, bell peppers and onion. When the oil and vinegar mixture is no longer hot, pour over the vegetables and stir to combine. Season to taste with salt and pepper. If possible, chill before serving.

Notes:
Once the peas are cooked, this dish comes together extremely easily. The salad is best, however, if it can chill for several hours to allow the flavors to blend. Cooked frozen black-eyed peas will have a better consistency for a salad than canned.
