Q: I would like the recipes for two items at the Brickery in Sandy Springs. I would love the opportunity to make the blue cheese salad dressing as well as the incredible Caesar Burger. They are the best.

A: We first asked Bruce Alterman, who co-owns the Brickery with his wife of 35 years, Sally, for the Caesar Burger recipe. "I could tell you, as long as I can move into your basement, " he answered. "My wife told me absolutely not. And she told me in a tone that I've learned not to challenge."

The Caesar Burger, it turns out, is the restaurant's signature dish, the "mac daddy" of its "genuine-food-driven menu, " as Alterman described it - and under no circumstances is he allowed to give out the recipe.
But the blue cheese dressing, that's a different story.

Hands on time: 5 minutes  Total time:   Serves: 16 (2-tablespoon) servings

Ingredients:

    1 cup (8 ounces) Hellmann's mayonnaise
    1/2 cup (4 ounces) sour cream
    2 tablespoons cold water
    1 1/2 teaspoons Worcestershire sauce
    1/8 teaspoon salt
    1/4 teaspoon finely ground black pepper
    7 ounces good-quality blue cheese, crumbled

Instructions:

In a mixing bowl, whisk together the mayonnaise, sour cream, water, Worcestershire sauce, salt and pepper. Stir in the blue cheese. Chill at least 6 hours before serving.

Notes:

Like all the Brickery's salad dressings, this one "starts with a recipe and a knife, as opposed to coming out of a 5-gallon bucket, " said co-owner Bruce Alterman. (And the knife is optional.) He suggests serving the dressing over a wedge of iceberg lettuce.

Per serving: 161 calories (percent of calories from fat, 91), 3 grams protein, 1 gram carbohydrates, trace fiber, 17 grams fat (5 grams saturated), 17 milligrams cholesterol, 279 milligrams sodium.
