Q: I am looking for a recipe for broccoli fritters at the Jasmine Tea Room at Collector's Corner in Sharpsburg. They are really delicious and a great way to use broccoli.

A: These fritters are indeed a great way to prepare broccoli, for a side dish, snack or appetizer. They fit in nicely with the Jasmine Tea Room's casual American white tablecloth cuisine.

Ingredients:

3/4 pound broccoli florets, blanched and finely chopped
2 eggs, beaten
2 cups shredded mozzarella cheese
2 cups shredded cheddar cheese
1/2 cup (6 slices) crumbled cooked bacon
1 1/2 tablespoons minced onion
1/4 cup all-purpose flour
3/4 to 1 cup dry bread crumbs
Vegetable oil for frying
Instructions:
Drain blanched broccoli by pressing through a fine strainer until free of moisture but not too dry. In a large mixing bowl, combine broccoli, eggs, cheeses, bacon, onion and flour. Mix well, cover and refrigerate 20 minutes.
When ready to shape, place bread crumbs in a shallow dish. Using a golf-ball-size scoop, portion broccoli mixture and put in dish of crumbs, turning gently to coat. Place on sheet pan lined with plastic wrap. Cover with plastic wrap and refrigerate until ready to fry.
Heat vegetable oil to 350 degrees. Fry fritters until golden, about 1 1/2 minutes. Drain and serve immediately.
