Broiled Lamb Chops With Garlic Sauce

Arnold Rosenberg of Atlanta describes his broiled lamb chops as "basic, " but while looking for some ideas to embellish them, he came across a suggestion to add a sauce consisting of butter, garlic and vinegar. "It made quite a difference," he adds.

Ingredients:

4 loin lamb chops
2 tablespoons butter
1 teaspoon finely minced garlic
1 tablespoon red wine vinegar
1 tablespoon finely chopped parsley
Instructions:
Preheat the broiler. Sprinkle lamb chops with salt and pepper. Arrange the chops on a broiler rack. Broil the chops about 4 or 5 inches from the heat source, until browned on one side, about 5 minutes. Turn and continue broiling 5 minutes or until browned on the second side.
Meanwhile, in a skillet, melt the butter. When foaming, add the garlic. Cook for 1 minute, swirling the skillet. Add the vinegar and cook for 10 seconds. Stir in the parsley. Pour sauce over the chops.
