Broiled Salmon With Garlic and Dill

It doesn't take much to dress up fresh salmon. But Atlantans Chip and Dagmar Epsten have found just the right accessories to elevate its taste into the realm of fabulous: garlic, dill, olive oil and salt and pepper. Food stylist Mary Ann Clayton found it so simple, she had "plenty of time to prepare a couple of easy side dishes." She opted for microwave-baked potatoes and steamed asparagus.

Ingredients:

4 small salmon fillets or steaks, about 6 ounces each
4 garlic cloves, chopped
2 teaspoons dried dill
Salt and pepper to taste
1 tablespoon olive oil (plus extra for greasing pan)
Instructions:
Preheat oven or toaster oven/broiler on broil. Grease a shallow pan with olive oil. Rinse salmon, pat dry and place in the pan. Sprinkle with garlic, dill and salt and pepper to taste. Drizzle with olive oil and spread evenly. Broil until salmon flakes easily, about 10-15 minutes.
Notes:
The Epstens make the meal even faster by pressure-cooking diced potatoes for a mere 2 1/2 minutes, and going with a pre-washed salad. Either way, you can't go wrong.
