Made famous by: Chris Fletcher of Atlanta, who modified a recipe he got from his grandmother, Lennie Mae Fletcher (her version includes corn, jalapeno peppers and Italian dressing). "I serve this dish as an appetizer while tailgating at Georgia Bulldog games, " Chris Fletcher said.
Fletcher's recipe was included in a cookbook, "Kitchen Miracles, " put out by the Club MARK ministry and the Chancel Choir of St. Mark United Methodist Church, in Atlanta.

Ingredients:

2 (15-ounce) cans black-eyed peas, rinsed and drained
1/2 cup roasted red peppers, drained and finely chopped
1 red bell pepper, seeded and finely chopped
1/2 cup chopped red onion
1 small tomato, diced
1/2 cup loosely packed chopped fresh cilantro or parsley
2 tablespoons white wine vinegar
2 teaspoons brown mustard
1 tablespoon granulated sugar
1 teaspoon ground cumin
2 cloves garlic, minced
1/4 teaspoon salt
1/4 cup extra virgin olive oil
Instructions:
In a medium bowl or plastic container, gently stir together the black-eyed peas, roasted red pepper, bell pepper, onion, tomato and cilantro or parsley. In a small bowl, combine the vinegar, mustard, sugar, cumin, garlic and salt. Whisk in the olive oil and pour over the bean mixture. Mix all ingredients well, cover and chill.
Notes:
Tip: Enhance the red-and-black theme by substituting black beans for one of the cans of black-eyed peas.
