Made famous by: Howard Myrick of Hattiesburg, Miss., who got the recipe from his stepdaughter after she brought them to a holiday meal about a year ago. "I try to keep some in the house all the time, " he said. "I have given the recipe to several of the neighbors, and I have yet to find someone who does not like them."
Myrick prefers Nabisco brand saltine crackers.
The recipe is easily halved, and the crackers store well for several days.

Ingredients:

2 (1-ounce) packets dry ranch dressing mix
1 1/4 teaspoons cayenne pepper
1 1/2 teaspoons crushed red pepper flakes
2 cups canola oil
1 pound saltine crackers with unsalted tops
Instructions:
In a 2-gallon resealable bag, mix together the dressing mix, cayenne and red pepper flakes. Add the oil and mix thoroughly. Add the crackers, seal the bag and turn it until the crackers are evenly coated. Turn the bag once every 20 to 30 minutes until the liquid is entirely absorbed by the crackers, about 2 hours. If desired, spread the crackers onto paper towels to absorb any extra oil before serving. Store in the resealable bag or other airtight container.
Notes:
Tip: Myrick, who often sends guests home with a quart-size bagful of Cajun Crackers, buys his dried ranch dressing mix in bulk at Sam's Club and measures the right quantity with a kitchen scale.
