(First star is lowest, fourth star is highest)
5:30 Challenge / 5 ingredients / 30 minutes
Joan Demer gave ordinary chicken breasts an extraordinarily flavorful, crunchy coating without going near her spice rack. Rather, she dipped them first in sour cream, and then rolled them in savory stuffing mix and Parmesan cheese. This will likely be a meal to please the whole family.
Hands on time: 10 minutes Total time: 30 minutes Serves: 4
1 1/2 cups dry herb-seasoned stuffing
1/2 cup shredded Parmesan cheese
1/4 cup ( 1/2 stick) melted butter
1/2 cup sour cream
4 boneless, skinless chicken breasts
Lightly spread sour cream over chicken and coat with stuffing mixture, pressing well to adhere. Place on a lightly oiled, foil-lined 13-by-9-inch baking sheet. Put any extra mixture on top of chicken. Bake for 20 to 25 minutes, or until the coating is crisp and the chicken is cooked through.
