Chicken Quesadillas

After seeing quesadillas prepared in a restaurant, Rumana Ahmed of Atlanta thought, "I could do that!" Not only did the recipe work, but she also gets rave reviews from her guests and especially from her fiance.

Hands on time:   Total time:   Serves: 4

Ingredients:

    8 medium tortillas
    2 cups shredded cheese, divided
    1/2 cup prepared or homemade salsa, plus extra for garnish
    2 cups shredded cooked chicken

Instructions:

In a lightly oiled skillet, place tortilla in pan. Sprinkle 1/2 cup cheese over tortilla. Spread 2 tablespoons of salsa on top of cheese. Sprinkle 1/2 cup of chicken over cheese and salsa. Top with another tortilla and cook for 1 minute. Flip and cook for 1 minute, or until cheese is melted. Cut into fourths. Repeat with remaining tortillas.

Notes:

Ahmed adds, "For a twist, I've mixed cheeses (half Muenster and half cheddar are very tasty) and added grilled chicken, ground beef or grilled fish. You'd be amazed at how tasty grilled tilapia fish is in a quesadilla!"
Serve with extra salsa, sour cream and guacamole on the side for a fiesta or a meal.
