Cincinnati Chili

Cincinnati chili is a different breed altogether from traditional chili. Cincinnati chili includes some unusual and distinctive ingredients: cinnamon, allspice, cloves and chocolate; and it is notable for the conspicuous omission of chili powder! Unlike other chili served as a stew or with rice, Cincinnati chili is traditionally served over spaghetti and is ordered in several ways, referred to by number. For a "2-way" add grated cheddar cheese; for a "3-way" add chopped onions; for a "4-way" top with kidney beans; for a "5-way" serve with oyster crackers and Tabasco. This long-simmering chili is made a day ahead and reheated. -- Jeanne Besser

Ingredients:

    1 quart water

    2 pounds ground beef or ground turkey

    2 medium yellow onions, finely chopped

    5 cloves garlic, crushed

    1 15-ounce can tomato sauce

    2 tablespoons cider vinegar

    1 tablespoon Worcestershire sauce

    10 peppercorns, freshly ground (about 1/4 teaspoon ground)

    8 whole allspice, freshly ground (about 1/4 teaspoon ground)

    8 whole cloves, freshly ground (about 1/4 teaspoon ground)

    1 bay leaf

    2 teaspoons salt

    2 teaspoons ground cinnamon

    1 1/2 teaspoons cayenne pepper

    1 teaspoon ground cumin

    1/2 ounce unsweetened chocolate, grated

    1 pound cooked spaghetti

Instructions:

In a large stockpot over high heat, boil the water. Add the beef and stir until separated and crumbly. Reduce the heat to a simmer and add the onions, garlic, tomato sauce, vinegar and Worcestershire sauce. Stir to combine. Add the black pepper, allspice, cloves, bay leaf, salt, cinnamon, cayenne pepper, cumin and chocolate. Return to a boil.
Reduce the heat and simmer for 2 hours. Cool completely, cover, and refrigerate overnight. Before serving, skim any fat and discard. Reheat and serve over spaghetti. -- Adapted from "Joy of Cooking"
