Q: The Mojito at the Clubhouse at Lenox Square mall is great. It is very refreshing and not bitter or medicinal tasting like some. Would they be willing to share their recipe?

A: "Our mojitos are very special because we use fresh limes as well as crushed ice and lots of fresh mint, " said managing partner Dan Stafford.
But the bartenders don't stop there. They stir things up by substituting different flavored rums, including lemon, orange, raspberry, apple and melon.

Ingredients:

8-10 mint leaves
1/4 lime, plus slice for garnish
1 tablespoon (0.5 fluid ounce) simple syrup
Crushed ice
3 tablespoons (1. 5 fluid ounces) Bacardi Limon rum
Club soda
Instructions:
In a pint glass, add the mint leaves and then squeeze in the juice from the 1/4 lime. Add the simple syrup and muddle the contents. Fill the glass with crushed ice. Add the rum and fill the glass with club soda. Stir (or pour through a strainer) and garnish with the lime slice.
Notes:
The Clubhouse prefers Bacardi brand flavored rums for these fizzy, minty cocktails.
Tester's notes: "Muddle" is fancy bar talk for mash together. If you don't have a muddler --- a masher on a stem to reach the bottom of a glass --- use a mortar and pestle or the back of a spoon.
Simple syrup is made by dissolving 1 part granulated sugar in 1 part boiling water, and then cooling to room temperature.
