Q: Our family truly enjoys the fried apples at the Cracker Barrel restaurant(s). Is it possible they are made with Granny Smith apples?

A: Like those of many chain restaurants, Cracker Barrel's recipes are proprietary - which essentially means forget about it. It's not that they don't want individual customers to enjoy their food at home, they are more concerned about the mega-chain across the street. But here is an interesting recipe we found on a copycat recipe site on the Internet, which may do the trick.

Ingredients:

6 small tart apples
1 teaspoon lemon juice
1/4 cup bacon drippings
1/4 cup brown sugar
1/8 teaspoon salt
1 teaspoon cinnamon
1 dash nutmeg
Instructions:
Peel and slice the apples, then place in a large bowl and toss with lemon juice. In a large skillet, warm bacon drippings over medium-high heat. Pour apples evenly over skillet bottom. Sprinkle with brown sugar and salt; toss gently. Cover and cook over low heat for 15 minutes, until apples are tender and juicy. Sprinkle with cinnamon and nutmeg. Serve warm.
