First, Carol Foster of Atlanta emailed with her recipe dubbed Country Club Chicken. "This was a creation of my country grandmother," Foster said. "No, she wasn't a member of a country club and this recipe didn't come from one. It is just a very 'rich'-tasting dish. It's easy and most of all, it presents well. People think you spent much more time than you did and most seem to love it."
Shortly after trying it, I received a letter from Beci Falkenberg, suggesting the added twist of using flavored cream cheese and fresh chives. Falkenberg, also of Atlanta, writes, "My 16-year-old twin daughters love the delicious combination of onion and chive whipped cream cheese with the chicken and bacon."

Hands on time: Total time: 30 minutes Serves: 4
Ingredients:

4 boneless, skinless chicken breasts
4 heaping tablespoons onion and chive or plain soft cream cheese (tub style)
2 tablespoons fresh chives (optional)
4 slices bacon
Instructions:
Pound chicken to 1/3-inch thickness. Spread with a thin layer of cream cheese. Sprinkle with chives. Roll chicken up, jellyroll style. Wrap with a bacon slice. Place on a lightly greased cookie sheet. Bake for 20 minutes. Change to broiler setting and broil for 5 minutes or until bacon crisps, turning midway for even cooking.
