Creamy Macaroni and Cheese

On chilly days, a soothing bowl of hot, creamy macaroni and cheese would definitely fill the bill.
While mac and cheese is a bit of an extravagance in terms of cheesy goodness, if eaten in moderation, it's an acceptable indulgence at this time of year. -- Jeanne Besser

Hands on time:   Total time: 30 minutes  Serves: 4

Ingredients:

    8 ounces (2 cups) elbow macaroni
    1 tablespoon butter
    1 tablespoon all-purpose flour
    1 cup 1 percent or 2 percent milk
    1 (8-ounce) block sharp cheddar cheese, grated

Instructions:

Prepare macaroni according to package directions.
Meanwhile, in a saucepan over medium-low heat, melt butter. Add flour and whisk well to incorporate. Cook for 30 seconds to 1 minute, whisking constantly. Add milk and bring to a simmer, whisking frequently. Cook for 1 to 2 minutes, or until mixture thickens. Add cheese and stir well to combine. When cheese has completely melted, add drained macaroni and stir well to combine.

Notes:

For better flavor, grate your cheese by hand or in a food processor. Do not use pre-grated cheese.

To make the meal: Green beans and mixed salad
