Crispy Parmesan Fish Fillets

This Parmesan cheese and flavored crumb mix for the coating gives a delicate crunch with added flavor. Tilapia fillets are frequently on sale and cook quickly.

Hands on time:   Total time: 30 minutes  Serves: 4

Ingredients:

    2/3 cup Italian seasoned bread crumbs
    1/4 cup grated Parmesan cheese
    1 egg
    1/4 cup milk
    4 tilapia or other firm white fish fillets

Instructions:

On a plate, mix together bread crumbs and Parmesan cheese and set aside. In a shallow bowl, lightly beat the egg and milk. Dip fish fillets in milk mixture, then coat with crumbs.
In a lightly oiled large skillet over medium heat, place fillets. Saute fish for 5 minutes a side, or until golden brown. Serve immediately
