Q: My daughters and I have been going to the Swan House in Buckhead for years. We always enjoyed the fruit salad and chicken salad and cheese straws every time we went. Do you think you could get one or all those recipes?

A: Many of the delightful ladies' lunch items served at the Swan Coach House have been published in a cookbook. "The Swan's Palette" (Forward Arts Foundation of Atlanta, $21.95) was compiled by some of the women who raised the funds that helped transform the carriage house of the landmark estate in Buckhead into a tearoom more than 30 years ago.

Ingredients:

FOR THE SALAD:
3 pounds skinless, boneless chicken breasts
1 medium onion, cut in half
1 bay leaf
6 sprigs parsley
1/2 teaspoon salt
1/4 teaspoon pepper
1 whole clove
1 cup water chestnuts, sliced
1/2 cup diagonally sliced green onions
Grated zest of 2 limes
FOR THE DRESSING:
1 cup mayonnaise
2 tablespoons soy sauce
1/3 cup curry powder
1 cup mango chutney, finely chopped
Instructions:
Cut chicken into bite-size pieces. In a large salad bowl, combine chicken with water chestnuts, green onions and lime zest, mixing well.
To make dressing: In a small bowl, combine mayonnaise, soy sauce, curry powder and mango chutney. Pour over chicken mixture and stir to mix well.
