Ingredients:

    1/3 cup crunchy peanut butter

    1 tablespoon minced shallot (1 small)

    2 teaspoons minced fresh ginger

    2-inch piece green onion, chopped

    1/2 to 1 jalapeno, seeded and chopped

    1 to 2 teaspoons curry powder

Instructions:

In a small bowl, combine peanut butter, shallot, ginger, green onion, jalapeno and curry powder.

Nutrition:

Per serving: 130 calories (percent of calories from fat, 76), 5 grams protein, 5 grams carbohydrates, 1 gram fiber, 11 grams fat (2 grams saturated), no cholesterol, 119 milligrams sodium.
