Q: I have recently had the world's most amazing dessert, right here in Atlanta. The Di's Delight at 10 Degrees South is hands-down the most wonderful confection I have ever tried. It is this warm, moist, buttery piece of heaven. Is there any way you could convince the owner to give out the recipe?

A: "After much persuasion, " owner Justin Anthony said, he was able to get the recipe for this unusual dessert from his mother, Di, who makes it for the restaurant every day. Part cake, part baked pudding, part sugar fix, Di's Delight is their most popular dessert, Anthony said. The restaurant specializes in South African cuisine.

Hands on time: 25 minutes  Total time: 1 hour  Serves: 12

Ingredients:

    2 eggs
    2 cups granulated sugar, divided
    2 cups self-rising flour
    Pinch salt
    1 (15-ounce) can fruit cocktail
    2 teaspoons baking soda
    1 (12-ounce) can evaporated milk

Instructions:

Preheat oven to 375 degrees. Lightly grease and flour a 9-inch-square cake pan or baking dish. In a mixing bowl, beat together the eggs and 1 cup sugar. Stir in the flour and salt. Drain the fruit cocktail over a bowl, reserving fruit and liquid separately. Stir the baking soda into the liquid until it is well-blended and frothy, then stir it into the batter. Fold in the reserved fruit. Bake the cake for 30 to 40 minutes, until it springs back when lightly touched in the center. Remove from the oven.
In a small saucepan over medium heat, combine the evaporated milk and remaining 1 cup sugar. Stir until the mixture is warm and the sugar is dissolved. Pour the syrup evenly over the warm cake. Serve warm with ice cream.

Notes:

Serve this golden, sweet cake still warm, with a scoop of vanilla ice cream. The dessert is best served the same day it's baked.
