Easy Grilled Salmon

Tasty marinades for this salmon are always in demand. Cathy Goldstein Schwartz of Atlanta sends this recipe with the note, "This is a quick and easy salmon recipe that has plenty of flavor, whether you enjoy your fish well-done or a bit on the rare side."

Hands on time:   Total time: 30 minutes  Serves: 4


    1/4 cup dark brown sugar (firmly packed)
    1/4 cup ( 1/2 stick) butter, melted
    2 tablespoons low-sodium soy sauce
    2 tablespoons dry sherry
    4 salmon fillets ( 1/3 to 1/2 pound each)


Preheat the grill.
In a bowl, combine brown sugar, butter, soy sauce and sherry. Pour half the mixture over salmon and marinate for 20 minutes.
Grill salmon, skin side up, for 3 to 4 minutes. Turn salmon and pour remaining marinade over top. Cook for 3 to 5 more minutes.


Per serving: 258 calories (percent of calories from fat, 40), 30 grams protein, 7 grams carbohydrates, no fiber, 11 grams fat, 94 milligrams cholesterol, 313 milligrams sodium.
