Family-friendly Fried Rice

This kid-pleaser, adapted from a recipe on familyfun.com, is a great side dish or vegetarian main dish. You can also use oyster sauce instead of soy. -- Jeanne Besser

Hands on time: 20 minutes  Total time: 20 minutes  Serves: 4-6

Ingredients:

    2 tablespoons peanut or vegetable oil
    2 large garlic cloves, minced
    1 tablespoon finely chopped fresh ginger
    1 medium celery stalk, chopped
    1/2 red or green bell pepper, seeded and diced
    10 snow peas, julienned
    1/2 cup frozen peas
    3 green onions, white and light-green parts, sliced
    4 cups cold cooked rice, broken into small clumps
    1/2 teaspoon salt
    1/2 teaspoon granulated sugar
    2 tablespoons soy sauce

Instructions:

Heat a large, flat-bottomed wok or skillet, preferably nonstick, for several minutes, or until a bead of water dropped in vaporizes within a couple of seconds.
Swirl in the oil to coat the sides and bottom, then add the garlic, ginger, celery and bell pepper and sauté for 20 seconds. Add snow peas, peas and green onions and stir for another 30 seconds. Add rice, breaking up any lumps, and stir for 1 to 2 minutes until everything is heated through. Sprinkle with salt, sugar and soy and stir to combine.

Per serving (based on 4): 352 calories (percent of calories from fat, 19), 20 grams protein, 53 grams carbohydrates, 14 grams fiber, 8 grams fat (1 gram saturated), no cholesterol, 824 milligrams sodium.
