What’s For Dinner?
Chicken gets jump-started in a skillet to give it a nice golden coating before being topped with salsa and a sprinkle of cheese and transferred to the oven. It's a hearty, flavorful meal.

1 (15-ounce) can black beans, rinsed and drained
1 cup salsa
1 cup shredded cheddar or Mexican blend cheese
4 tablespoons reduced-fat or plain sour cream
Wake up your taste buds on a busy night. A packaged curry sauce available from your favorite market makes this recipe easy and full of flavor.

15 baby carrots, sliced thinly
1 red bell pepper, seeded and sliced in thin strips
1 pound boneless center-cut pork chops, sliced in thin strips
1 (14-ounce) can Bright Red Curry sauce or other brand of curry sauce
This hearty stew can really hit the spot on a chilly night. We tried it with a spicy chicken sausage, but any precooked or smoked sausage works well.

1 small onion, cut into 8 wedges
2 (14.5-ounce) cans stewed or diced Mexican tomatoes or other variety of seasoned tomatoes, undrained
1 pound cooked smoked sausage, cut into 1 1/2-inch slices
1/2 medium cabbage, cut into 6 to 8 wedges
