The sweetness of the honey and the acidity of the vinegar and mustard in this recipe are perfect foils. We grilled our fish, but it can also be broiled.

Capers and olives flavor the tomato sauce in this fish, easily made in the microwave. The parchment packet it's cooked in is ideal for one or two servings and there's very little cleanup.

1 (4- to 6-ounce) cod or other fish fillet, about 1/2-inch thick
