Q: After having dinner with my husband at Fogo de Chao last night, I'm convinced the reason that I so look forward to going there isn't the famous meat, but the potato salad at the salad bar. I'd love to get the recipe they use; it includes both sweet and white potatoes.

A: Surprise! Those orange chunks in the salad aren't sweet potatoes, but carrots. Regardless, the potato salad is one of the most popular items on the gorgeous salad bar at Fogo de Chao, said general manager Elmir Bernardon. "Maybe it's the freshness, because we make it pretty much every day, " he said.
Chopped tomatoes and onions also add an element of surprise, along with a healthy seasoning with salt. Bernardon suggests using best-quality mayonnaise for the dressing, too.

Ingredients:

2 pounds potatoes (about 3 large or 4 medium)
1 carrot
1/2 medium onion, finely chopped
2 Roma tomatoes, diced
2 teaspoons salt
1 1/2 cups mayonnaise
2 tablespoons chopped parsley
Instructions:
In a large bowl, combine the potatoes, carrot, onion and tomatoes. Toss with 1 1/2 teaspoons salt. Stir in 1 cup mayonnaise, then stir in additional salt and mayonnaise to taste and texture preference. Garnish with parsley.
