Fresh Fish in Coconut Cream of Curry

A favorite dish along the eastern coast of Africa is fish curry. Here we offer a simple version combining curry, coconut and black pepper.

Hands on time: 10 minutes  Total time: 40 minutes  Serves: 4

Ingredients:

    2 tablespoons butter
    1 onion, thinly sliced
    1 teaspoon salt
    2 teaspoons black pepper
    1 teaspoon crushed red pepper
    4 pounds whole fresh fish (bass, snapper, halibut or any fish, heads removed, and filleted) or 2 pounds fillets
    3 cups coconut cream or milk
    4 tablespoons curry powder

Instructions:

Preheat oven to 400 degrees. In a saucepan, melt butter and add onion, salt, black pepper and red pepper. Add fish and saute for 3 minutes on each side. Pour the coconut milk and curry powder over the fish. Put fish in a baking pan and pour mixture over it. Cover with foil and bake for 30 minutes.
