Have you ever wondered what to do with leftover salmon from the warehouse store? Joni Pelta of Atlanta says, "I purchased a huge hunk of salmon at Costco. On the first night, I grilled it. On the second night, I wanted to do something else with that delicious fish and thought about the canned salmon patties I make sometimes. That's when the inspiration hit me to use fresh ingredients for salmon patties, a recipe I've seen only with canned salmon."
Fresh salmon makes a lighter, less fishy-tasting patty. Don't worry about exact amounts. This recipe is very flexible. For a fifth ingredient, you can choose a bun for a casual salmon burger, or a dollop of tartar sauce for a more elegant presentation.

    1 pound skinless salmon fillet, cut into large pieces
    2 tablespoons chopped onion
    1 egg
    1 tablespoon bread crumbs


In a food processor, combine salmon, onion, egg and bread crumbs. Pulse briefly, just until chopped. Form into 3 patties.
In a nonstick or lightly greased skillet, pan-fry patties for 5 to 8 minutes per side, or until cooked through.


Per serving: 209 calories (percent of calories from fat, 31), 32 grams protein, 2 grams carbohydrates, trace fiber, 7 grams fat, 141 milligrams cholesterol, 139 milligrams sodium.
