Grilled Chicken Thighs With Pineapple Relish

I think this recipe from Liz Jarnagin of Monroe is my favorite of the three that she’s sent in over the years (Jarnagin also sent in the 30-minute Chicken Cordon Bleu that recently ran here). She writes: “This is a total throwback to the Polynesian chicken of the ’70s. The sweet and slightly salty relish is very tasty. It’s really good served over rice.”
I agree, the pineapple relish had a great balance of flavors and complemented the smoky grilled chicken perfectly. The chicken can be cooked on an indoor or outdoor grill or broiled. If you prefer white meat, choose boneless breasts.

Ingredients:

1 (20-ounce) can crushed pineapple in its own juice
1/2 cup brown sugar
1 tablespoon reduced-sodium soy sauce
1 tablespoon minced garlic
8 skinless chicken thighs
Instructions:
Preheat a grill.
In small saucepan, combine pineapple, brown sugar, soy sauce and garlic and bring to boil. Reduce heat and simmer for 5 to 10 minutes.
Meanwhile, cook chicken thighs on indoor or outdoor grill, about 10 to 15 minutes, turning once. Transfer to a platter and serve relish over chicken.
