These Grilled French Bread Pizzas are a creative take on the standard tomato, fresh mozzarella and basil combination. Long slices of baguettes are layered with classic toppings and grilled to imbue the sandwich with a slight smokiness, which heightens its intensity, while still allowing the fresh and pure flavors of the ingredients to shine through.
I like to cut the bread on a diagonal to get a large long slice with a healthy amount of crust on both sides to anchor it on the grill. The angled cut is similar to that of biscotti for its second baking. I end up with a piece of bread that is about 7 to 8 inches long and 1 inch thick to provide a substantial serving.

Ingredients:
4 diagonally cut French bread slices, 7 to 8 inches long and 1 inch thick
3 to 4 tablespoons olive oil or garlic flavored olive oil
2 large ripe tomatoes, thickly cut
4 ounces fresh mozzarella, thinly sliced
12 basil leaves or 4 thin slices prosciutto
