This is such a pretty dish, with the red tomatoes and green parsley, you could go all out with the Italian flag colors -- red, green and white -- by adding sauteed zucchini and quick mashed potatoes (homemade or from the deli or refrigerator case).

Hands on time:   Total time: 30 minutes  Serves: 4

Ingredients:

    1 pound fresh ripe tomatoes, chopped
    2/3 cup chopped fresh Italian parsley
    2 tablespoons capers
    3 tablespoons Italian salad dressing, divided
    4 grouper fillets (or other firm-fleshed fish), about 6 ounces each

Instructions:

In a large glass bowl, combine tomatoes, parsley, capers and 2 tablespoons dressing. Season to taste with salt and pepper.
Brush grouper with remaining dressing. Broil, skin side down, for about 5-10 minutes, depending on the thickness of the fish.
Serve the grouper with the sauce on top. Garnish with parsley and lemon slices, if desired.
