Made famous by: Melinda Jones of Atlanta, who got the recipe from a friend of a friend 20 years ago and has been serving it faithfully ever since. "[One] Thanksgiving I did a jazzy green bean recipe with blue cheese and roasted red peppers, " she said. "Unfortunately, it just wasn't that good. And this recipe is that good."

Ingredients:

2 hard-cooked eggs, shelled
1 cup mayonnaise
1 1/2-2 tablespoons prepared horseradish
1 1/2 teaspoons chopped fresh parsley
1 teaspoon Worcestershire sauce
Juice of 1 lemon
Garlic salt to taste
Dash of celery seed
Salt and pepper to taste
Instructions:
In a food processor, chop the hard-cooked eggs. Add the mayonnaise, horseradish, parsley, Worcestershire sauce and lemon juice, and puree. Season to taste with the garlic salt, celery seed, salt and pepper. Chill at least 2 hours or overnight before serving over warm green beans.
Notes:
This recipe can be served with fresh or canned green beans. "To me, part of the deal with this sauce is that you can use the canned green beans, " Jones said. It can also be served with broccoli or asparagus, and it would even make an excellent light dip for celery and carrot sticks.
At large gatherings, serve the sauce on the side so children can have their veggies plain, if they prefer.
