Honey-Grilled Cherries in Cardamom Curry

Serve the warm cherries (shown above in a grill-ready "bowl" of aluminum foil) straight off the grill over vanilla ice cream.

Ingredients:

1 pound fresh cherries
2 tablespoons cinnamon
1 tablespoon ground cardamom
1 tablespoon ground ginger
1 teaspoon nutmeg
2 tablespoons light brown sugar
4 tablespoons unsalted butter, melted
1/2 cup honey
2 tablespoons Grand Marnier (optional)
Sea salt to taste
Instructions:
Clean and pit the cherries, cutting them in half. Combine the cinnamon, cardamom, ginger, nutmeg and brown sugar. Stir in the melted butter, honey and Grand Marnier, mixing until a paste forms. In a large bowl, combine the cherries with the spice paste and mix well. Create a "bowl" of aluminum foil to put the cherries in for placing them on the grill. Let them cook, sealed and away from the hottest part of the fire, for 20 minutes, or until the mixture melts and the cherries are tender. Serve immediately over ice cream. Sprinkle with sea salt as desired.
