When shopping at Whole Foods recently, I picked up a free recipe at the seafood counter for Honey Mustard-glazed Salmon that sounded tasty. I tinkered with it here and there and was thrilled with the results. The sweetness of the honey and the acidity of the vinegar and mustard were perfect foils.
Although the original recipe called for broiling, with the recent (albeit intermittent) sunshine, I decided to cook it on my outdoor grill for a little more flavor. To round out the meal, I added tortellini for my fish-phobic son and tender snap peas and enjoyed a wonderful dinner that was a cinch to prepare.

Hands on time:   Total time: 30 minutes  Serves: 4

Ingredients:

    2 tablespoons honey
    2 tablespoons grainy mustard
    1 garlic clove, minced
    1/2 teaspoon cider vinegar
    1 pound salmon fillet with skin

Instructions:

Preheat grill.
In a bowl, combine honey, mustard, garlic and vinegar. Spread evenly on top of salmon (if you have extra, lightly cover the sides, too). Place salmon skin side down on grill and cook for about 10 to 15 minutes, or until just cooked through. Check frequently for flare ups. Also, do not turn the fish over, as the honey could cause flare-ups.

Per serving: 171 calories (percent of calories from fat, 23), 23 grams protein, 9 grams carbohydrates, trace fiber, 4 grams fat (1 gram saturated), 59 milligrams cholesterol, 170 milligrams sodium.
