Tami Worth of Suwanee sent in a favorite recipe that uses chicken thighs. She makes a sauce that has a bit of an Asian flavor and keeps the meat moist while cooking. To concentrate the sauce, drain after cooking and boil until thickened.

Ingredients:

2 oranges
2 tablespoons honey
1 tablespoon soy sauce
1 teaspoon ground ginger
2 pounds skinless, boneless chicken thighs
Instructions:
Preheat the oven to 400 degrees. Squeeze the juice from one orange until you have 1/4 to 1/3 cup juice. Add honey, soy sauce and ginger and whisk to combine. Arrange chicken in baking dish and sprinkle with salt and pepper. Pour orange juice mixture over chicken. Cover with foil and bake for 15 minutes.
Remove from the oven and turn chicken. Return to oven and bake for 10 minutes. Meanwhile, thinly slice remaining orange. Arrange slices over chicken and bake 3 minutes more.

Notes:
For those times when you need a make a meal with kitchen staples, replace fresh oranges with refrigerated orange juice and you'll have everything you need for a fast and fresh-tasting meal. White-meat lovers can substitute boneless breasts for thighs. Steamed broccoli and rice make good accompaniments.
