Q: I have found the best hummus in Georgia, but the restaurant is too far from Atlanta to just pop in and get some. If you could get the recipe from Grapes & Beans in downtown Clayton, it would be a great day for all, especially vegetarians.

A: Melissa Smart, a cook at Grapes & Beans, gladly provides the recipe, with the understanding that at this point it is in her head. She, like many cooks, visually measures and tastes to adjust seasonings instead of precisely following a specific recipe. Grapes & Beans' version of hummus has chopped parsley, which adds a bit of greenery to this classic Middle Eastern fare.

Hands on time: 15 minutes  Total time: 15 minutes  Serves: 16

Ingredients:

    3 to 4 garlic cloves
    1/2 cup parsley
    2 (19-ounce cans) chickpeas, rinsed and drained
    4 tablespoons tahini
    2 tablespoons lemon juice
    1 cup olive oil
    1/2 cup water
    1/2 teaspoon cumin, or to taste
    1/2 teaspoon cayenne, or to taste
    Dash curry, or to taste

Instructions:

In a food processor with the motor running, chop the garlic. Add the parsley and pulse until chopped. Add chickpeas, tahini, lemon juice, olive oil, water, cumin, cayenne and curry and process until smooth. Taste and adjust seasonings if necessary.

Nutrition:

Per serving: 224 calories (percent of calories from fat, 64), 4 grams protein, 17 grams carbohydrates, 3 grams fiber, 16 grams fat, no cholesterol, 207 milligrams sodium.
