Isabel's Corn Bread
Hands on time: 5 minutes Total time: 30 minutes Serves: 8
Ingredients:

2 tablespoons bacon grease or unsalted butter
1 1/2 cups plain white cornmeal, not cornmeal mix or self-rising cornmeal
1 teaspoon fine salt
1 teaspoon baking soda
2 cups buttermilk
1 large egg, lightly beaten
Instructions:
Preheat oven to 450 degrees. Place the grease in a cast-iron skillet or ovenproof baking dish and transfer to the oven to heat about 15 minutes. Meanwhile, combine in a medium bowl the cornmeal, salt and baking soda. Set aside. In a large measuring cup, combine the buttermilk and egg. Add the wet ingredients to the dry and stir to combine. Remove the heated skillet from the oven and pour the melted grease or butter into the batter. Stir to comb, inethen pour the batter into the prepared pan. Transfer to the oven and bake until golden brown, 20 to 25 minutes.
Notes:
Note: Not as many of us have a canister of bacon grease sitting by the stove as in our grandmother's day. The amount of bacon needed to produce 2 tablespoons of bacon grease varies from brand to brand, but a safe bet is about 6 slices.
