5:30 CHALLENGE: 5 INGREDIENTS, 30 MINUTES

Roy and Becky Adams of Fayetteville gave me the heads-up on Niman Ranch's new line of precooked sausages. The Adamses write, "We've been cooking Italian Sausage and Peppers for 30 years, but with a time-consuming routine using uncooked sausage. We were cooking for friends, and wanted something quick and easy that wouldn't distract us. Imagine how surprised we were to find pre-cooked Italian sausage at Publix. Flavored canned tomatoes added the necessary seasonings."
After testing, I found this a great compromise ingredient.

Hands on time:   Total time: 30 minutes  Serves: 4

Ingredients:

    1 large onion, chopped
    1 large bell pepper, seeded and chopped
    1 cup sliced mushrooms
    1 (12-ounce) package fully cooked Niman Ranch all-natural Sweet Italian Sausage
    1 (28-ounce) can basil-, garlic- and oregano-flavored diced tomatoes (the Adamses like Hunt's)

Instructions:

In a well-oiled skillet over medium-high heat, saute the onion for 1 to 2 minutes. Add the bell pepper and mushrooms and saute for 5 minutes. Add the sausage and cook for 1 minute. Add the tomatoes and their juice and stir to combine.
Reduce heat to medium; cook uncovered until thickened, about 15 minutes.

Nutrition:

Per serving: 359 calories (percent of calories from fat, 68), 15 grams protein, 15 grams carbohydrates, 3 grams fiber, 27 grams fat (10 grams saturated), 65 milligrams cholesterol, 642 milligrams sodium.
