Q: I love the Ginger Dressing at Joli Kobe Bakery. Any chance of finding the recipe?

A: The house dressing at Joli Kobe has ingredients that you can't quite place - but that you always want to taste one more time to see if you can. What is that . . . garlic? Soy sauce? Carrot? If "ginger" weren't in the name, you might be guessing about the key ingredient for quite a while.
"It has a strong suggestion of ginger, but it's not overpowering, " explained Bill Lally, Joli Kobe's director of food and beverage.


Hands on time: 5 minutes  Total time: 5 minutes  Serves: 1 1/2 cups (12 2-tablespoon servings)

Ingredients:

    2 teaspoons chopped fresh ginger
    1 1/2 teaspoons finely chopped yellow onion
    1 small clove garlic
    3/4 teaspoon yellow mustard
    1/4 cup aji-mirin or mirin (sweetened rice wine)
    2 tablespoons soy sauce, more for seasoning
    2 tablespoons water
    1 cup vegetable oil
    Salt and pepper to taste

Instructions:

Place the ginger, onion, garlic, yellow mustard, aji-mirin and soy sauce in the blender and blend until smooth. Add the water and, with the motor running, gradually add the vegetable oil in a thin stream. Season to taste with salt, pepper and soy sauce.

Notes:

You may find yourself looking for excuses to eat more salad once this dressing is in your refrigerator.

Per serving: 170 calories (percent of calories from fat, 98), trace protein, 1 gram carbohydrate, trace fiber, 18 grams fat (2 grams saturated), no cholesterol, 176 milligrams sodium.
