Q: The food at Floataway is always amazing, but I return for the innovative cocktails. Last summer my favorite was a gimlet made with cucumber, but this year the Lemoncello Collins was just as good. It brought back memories of a trip to Italy, where I was introduced to this liquor. Can you get the recipe? -- Rich Besser, Atlanta
A: Luckily, when my husband requested this recipe, I didn’t need to pull strings to get it. Chef-owner Annie Quatrano is always happy to share. This refreshing summer drink tastes like lemonade with a kick. It begins with simple syrup infused with fresh thyme , then vodka is added and lemoncello. It’s topped with a splash of sparkling water for a little effervescence. Add simple syrup to your preferred sweetness.

Ingredients:

2 ounces lemoncello
2 ounces fresh lemon juice
1 to 1 1/2 ounces Thyme Simple Syrup (recipe follows)
1/2 ounce Stolichnaya or other premium vodka
1 splash sparkling water or soda water
Garnish
1 sprig fresh lemon thyme
1 lemon slice, seeded
FOR THYME SIMPLE SYRUP:
1 cup water
1 cup granulated sugar
5 to 6 sprigs lemon or plain thyme
Instructions:
To prepare the Lemoncello Collins: In a shaker, combine lemoncello, lemon juice, generous 1 ounce simple syrup and vodka. Shake with ice and pour into a tall glass. Taste and add simple syrup, if desired. Top with a splash of sparkling water. Garnish with a sprig of thyme and lemon slice.
Refrigerate remaining simple syrup to use later.
