In the "5:30 Challenge," we continue to be amazed at how much variety you can incorporate into everyday meals even if you restrict the number of ingredients to 5 and mealtime preparation to 30 minutes. This particularly inventive dish, devised by Jeanne Besser, is not only delicious but healthful -- and a boon for low-carbers.

Hands on time: 10 minutes  Total time: 20 minutes  Serves: 4

Ingredients:

    1 (4-ounce) package gourmet mushroom blend
    3 cups shredded cabbage or coleslaw mix
    1 pound stir-fry pork strips (or tenderloin cut into thin strips)
    2 tablespoons hoisin sauce
    1 small head Boston or bibb lettuce, leaves removed

Instructions:

In a well-oiled skillet over medium heat, add mushrooms and cabbage. Stir-fry until tender and liquid has evaporated, 5 to 7 minutes. Add pork and stir-fry until pork is almost cooked through. Add hoisin sauce and 1 tablespoon water to pork mixture and stir to combine. Cook for 1 minute or until pork is cooked through.
Spoon moo shu into lettuce leaves. Wrap around and eat.

Per serving: 205 calories (percent of calories from fat, 15), 22 grams protein, 23 grams carbohydrates, 4 grams fiber, 4 grams fat (1 gram saturated), 59 milligrams cholesterol, 161 milligrams sodium.
